Bacon Fall Throw Together

This is the perfect time to blog. I just carb loaded and feel uncomfortably full. So I've taken a fond interest in my couch. And watching Glee. Sh*t, I love that show. If I had a dream, it would be to be on that show. And be good at dancing and singing. Instead, I sometimes sing karaoke and go to bars and dance, and look like an drunken mess, when really I am the only sober person there. I always wonder why guys don't hit on me at the bars...maybe I should take a step back and think about that one more time...

Anyways, I've been craving carbs lately. I'm pretty in-tune with my body at this point and know exactly what I need more of at times. And recently, I've needed more carbs. My last craving stage was nut butters. My body wanted fat. Thank gosh I got that stage under control. I'm not really allowed to have nut butters anymore. I do, but I shouldn't. Dumb. But my carb cravings have turned out pretty delicious. I've been getting down on a lot of sweet potatoes. In any form. I've had mashed sweet potatoes, cinnamon dusted sweet potato chips, bacon greased-cubed sweet potatoes, and lots of dark chocolate. Oops, how did that get in there. So today was exactly the same. I ran a mile and tried to keep up with Jason. Terrible idea. Had to lie in the fetal position for a while afterward in order not to vomit. Fun sh*t. So once I got home, I obviously needed to stuff my face with carbs. I mean fill glycogen stores. That's exactly what I was thinking about....glycogen stores...yeahhhh. So in the carb deprived state of mind I was in, I threw together bacon, sweet potatoes, and spaghetti squash. Seemed right. And it was. I started off with a small plate full....then had 3 more...until it was gone. Nice, Juli. I may have eaten a sweet potato that fell on the floor, but I'm not admitting to anything.

What you need:
  • 4-6 pieces of uncured bacon, diced
  • 1 large sweet potato, diced
  • 2 cups leftover roasted spaghetti squash
What you do:
  1. This may be hard to follow, but bare with me.
  2. Add diced bacon and sweet potato to a large skillet. Cover to cook.
  3. Cook until bacon is half way cooked, then add spaghetti squash.
  4. Cook until sweet potatoes are soft and bacon is cooked.
  5. Consume. And smile a lot.

    1. Dang it! This would have come in handy last week. I had almost an entire half a spagetti squash left that I had no idea what to do with.
