These brownies were inspired by the all great George from Civilized Caveman who recently made apricot brownies. I really don't understand how he comes up with some of the desserts that fill his blog. It's a thing of beauty I tell you. Check out his recipe list, bomb. Anyways, Georgia (not to be confused with George) and I have been experimenting with paleo brownies lately. It just seemed like a good idea to put peaches in them especially since our pallets must stay fructose free this month. Peaches are moist. I love that word. Most people don't. Moist peaches = moist brownies = happy paleo people. Makes sense.
What you need:
- 1 cup Enjoy Life chocolate chips
- 1/4 cup coconut flour
- 1/4 cup honey
- 1/4 cup agave nectar
- 1/4 cup coconut oil (or grapeseed works well)
- 1/4 cup unsweetened shredded coconut
- 2 eggs
- 1/2 teaspoon sea salt
- 1/2 teaspoon baking soda
- 1 tablespoon vanilla
- 1/2 cup chopped walnuts (or other nut)
- 1-2 peaches, pitted and diced
What you do:
- Preheat your oven to 350 degrees now. Don't you hate when you forget? I do.
- First you're going to need to melt the chocolate. I did it the easy way, microwave. It's caveman like. Put the chocolate chips in a large mixing bowl, threw it in the microwave and let it cook for about 30 seconds, mix and reheat if it needs longer. Just don't burn the sh*t ok?
- Now add the rest of your ingredients and mix thoroughly.
- Add the batter to an 8 x 8 pan.
- Bake for 12-20 minutes. I know, big time frame, I get it, I suck. (so many commas) But it has seriously been different every time. Just use the toothpick test.

I don't even remember how I came across your blog but it is by far my favorite! I check it every day hoping you have a new entry because I totally get your sense of humor and it pretty much makes my day...and I love to eat!!! So thank you for the laughs and the awesome recipes and good luck with the no fruit for a month...I don't know if I could do that.

ReplyDeleteOooh this recipe looks so good!! Did you use yellow peach or white ones or it doesn't matter? I don't have Enjoy Life Chocolate chips, are they already sweetened? Btw love your humor on your posts! :)
ReplyDeleteOk, these sound good & moist. ;), but really, really sweet! How about puree'ing the peaches and leaving out the honey & agave nectar! Now that would make for a peachy brownie!

I have to make these ASAP. I just don't have any peaches. Dang it! Grocery shopping tomorrow...and I know exactly what you mean, that it sucks to not get any brownies- I made some AMAZING pumpkin cake bars with cinnamon icing (recipe a la Health-Bent) and I gave them to the people at my church for the fall festival...once I set them on the table and realized what I was about to do, I almost took them back to my car. hahahah However, I did lick the spatula. & cut myself a little piece...so it wasn't THAT bad. :)
