Paleo Crockpot Pork Green Chile

I'm really into dried figs right now. They remind me of when I was younger and ate the sh*t out of Fig Newtons. Holy balls those lil' cookies of happiness really got me going. I could easily eat a whole box of those. Who am I kidding, I could STILL eat a whole box. The seeds give a little crunch to a soft cookie and make life wonderful. People who don't like Fig Newtons know nothing. But if you don't like the cookie version....how about the dried fruit version? Stupid good.

Anywho, I'm talking so much about cookies BECAUSE there are literally 9 DOZEN cookies sitting on top of my microwave on the counter. No, they are not paleo. Yes, they are pure sugar and flour. And yes, they make me drool everytime I walk by them. And think about how many times I walk through the kitchen in one day...holy crap...that's a lot of drooling. Mopping the floor is easy, I guess. Terrible joke. But seriously, these cookies never leave. That's probably because my roommates are extremely thin and have something called self control. I have self control in the fact that I just make paleo desserts instead. Or consume mass amounts of dried figs. Or pecan coconut butter. Sh*t that stuff is good. Just you wait. JUST YOU WAIT.

You know what's weird? Old Navy commercials. Really weird.

What you need:
  • 2lb pork roast
  • 1 yellow onion, chopped
  • 2 garlic cloves, minced
  • 3 (4 oz) can diced green chiles
  • 2 anaheim chilis, seeds removed and chopped
  • 1 poblano pepper, seeds removed and chopped
  • 1-2 jalapeno peppers, diced
  • 2 cups chicken or beef broth
  • 1 (8oz) can of diced tomatoes
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon white pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon sage
  • 1/2 teaspoon paprika 
  • 1/2 teaspoon cayenne pepper
What you do:
  1. Pull out your crockpot.
  2. Place your pork roast in the crockpot and place all the veggies around it. 
  3. Pour your green chiles and tomaotes over the pork. 
  4. Toss in all the spices on top.
  5. Pour your broth in the crockpot. 
  6. Turn your crockpot on low and cook for 6-8 hours.
  7. Once the time has elapsed, use some tongs to shred your pork and mix all the ingredients together. 
  8. Consume!!

  1. Amazing timing! I had a pork roast in the frig that I had to cook today. And now I am serving up a delicious meal instead of the boring plain roast I was going to do. It is wonderful...thanks! PS Way to go on the willpower with the cookies!

  3. Juli, I've been really getting into your blog, love your humor and sarcasm and everything in between! This recipe looks and sounds so yum! I've become a big pork in the crock pot fan! I will for be trying this recipe on my fiance and his buddy who loves to eat with us when I try new paleo recipes! Side note, love that you talk openly about your body and the issues you sometimes have with it, I really connect to that and even if it is just while I'm reading your blog, I do for a bit feel better about mine. Constant up and down struggle w/ that stupid number and what I think it should be! ugh! Thanks for this awesome blog! you rock!

  4. I sometimes just put a pork roast in the crockpot with a little water and garlic just so i can have shredded pork for breakfast! it's just so good. And thank you for letting me know that you appreciate the body talk. It's something I deal with on a regular basis but don't talk about as much as I would like because some people are offended by it. This blog is slightly a diary for me so you may be hearing more about that kind of stuff. Keep your head up on the tough days, we all go through it sometimes :) and email me if you ever need to vent or chat!

  8. Hey Juli, how many did this serve? I need to feed about 6 people and want leftovers - I am guessing 2lbs is not enough, thoughts? Can't wait to try this over the New Year!

  9. It made a lot Jenny but better safe then sorry. I'd say go with 3 lbs so u for sure have leftovers. This probably made about 5-6 meals for me I think, plus some snacking of course

  11. On day 2 of Whole30 and I am SUPER excited to try this recipe!! I feel like I need FLAVOR! haha I'm not craving sugar as much as chips and all that not good stuff....going to the store tomorrow for the ingredients!! :)
